Paleo Apple Crumble

This is an incredibly simple crumble recipe, I exchanged standard flour for millet and coconut flour but I am eager to experiment with some more elaborate crumble recipes soon! It's interesting that although coconut sugar will still raise your blood sugar level, I never get that crash after eating it like I do with processed food, bread or what we think of as "real" sugar. Also, for this time of year a cooked fruit dessert can be the perfect remedy for getting the critters out if you manage to catch a stomach bug!

 

 

Ingredients

For the filling:

4 cooking apples

1/2 cup coconut sugar 

1 cinnamon stick

 

For the crumble:

3/4 cup coconut sugar

3/4 cup butter

1 cup millet flour

1/4 cup coconut flour

 

Instructions

 

1. Preheat the oven to 180c/ 350f

2. Peel, core and slice or chop the apples and place into a saucepan

3. Sprinkle the coconut sugar on top and add the cinnamon stick

4. Cook gently for half an hour, stirring occasionally, to soften the apples and get the most out of that stick!

5. Put the flour and coconut sugar into a mixing bowl, slice the butter into small cubes and add to the bowl. Ensuring your hands are cold, gently rub the butter into the flour being careful not to overwork the butter which will make it greasy and spoil the crumb texture

6. Remove the cinnamon stick from the apples and tip the mixture into a standard size cake tin and crumble the crumble on top, spread the mix evenly over the apples

7. Bake for 25 minutes
