Paleo Ferrero Rocher
I started having a bit of a panic attack thinking about celebrating Christmas minus the ultimate chocolate goodie in the whole universe so I went and did it paleo style. This also became a very handy gift idea, especially for those loved ones who are aiming to eat clean as we enter 2018. Got myself some gold sparkly heart boxes from Tiger and some metallic foil paper cases off Amazon and I was pretty damn impressed myself. Luckily, so were my family and friends. To be perfectly honest, these are no real Ferrero, they are quite different in taste and texture so I am going to be venturing into a new and improved recipe so will update you if I succeed!
Makes 27 Ferreros
1 cup roasted hazelnuts 3 tablespoons carob powder 2 teaspoon of vanilla extract 4-5 tablespoons coconut nectar chopped hazelnuts (to garnish)
1. Add the hazelnuts into a food processor(keep aside 18 hazelnuts for the center) and blend until chopped into fine pieces. 2. Add cacao, vanilla and salt and blend again. 3. Add coconut nectar and blend until the ingredients start to stick together, this can take a minute depending on the power of your food processor. 4. Roll into small bite-sized balls, insert at the center one hazelnut, and roll over chopped hazelnuts to cover the balls. 5.Place in the freezer for 30 minutes to harden.
