A TBA sandwich is a perfect alternative for those who don't eat pork! The sweet potato bread is the perfect alternative for those avoiding grains, gluten and yeast. It makes the perfect sandwich base for the combination of Candi Killer Ketchup, turkey bacon and avocado-smash.
I fell in love with turkey bacon during the Candida cleanse I pursued with every fibre of my being back while living in New York. Prior to that I had been vegetarian. When wondering what on earth I would eat for breakfast given that eggs were a no-go I remembered turkey bacon was a thing stateside but I could not settle for anything less than free-range and it also had to be sugar free because even bacon is made with sugar! Can you believe, I actually discovered just that and it was even called Paleo Turkey Bacon, it did used to cost me something like $7.99 a pack! Unfortunately we are not so lucky to have such prime turkey bacon which has also led a free-range life but I made an exception to create this recipe for my dream paleo meal plan for a week for Paleo Menu!
Sweet Potato Bread
100g flax meal
550g sweet potatoes
200g brazil nuts, roughly sliced
3 tsp baking powder
100g butter or coconut oil
1. Peel and roughly dice the sweet potato, add to a pan with an inch of water, bring to the boil and then simmer with the cover for 15 minutes.
2. Strain and add to the blender along with all of the other ingredients, it will form a thick moist mixture.
3. Line a loaf tin with greaseproof paper, scoop the mix into the tin and bake in a preheated oven at 170c for 1 hour and then at 140c for 1 more hour, the bread will still be moist inside because of the sweet potato but once you leave it overnight it will firm up and if you toast it under the grill it will reach a perfect texture which is pretty much to die for!
