Cherry Bakewell Porridge

1 cup porridge oats

2 cups water

1/4 cup almond milk

1 tbsp ground almonds

1 tbsp almond butter (plus extra for decoration)

1 tsp almond extract

Handful of flaked almonds and defrosted cherries for decoration 


Cherry Compote

3 cups frozen cherries

1-2 tbsp xylitol

1-2 tbsp lemon juice

(add a tbsp of cornstarch if it needs help thickening)



1. First of all, make your cherry compote by combining all ingredients in a small pan and heat gently until the cherries have defrosted, then cook further to reduce any excess liquid so that a nice thick compote is formed

2. Cook oats with the 2 cups water, gently over a medium heat for 5 minutes. Turn the heat to minimum.

3. Stir in the other ingredients, excluding the decorative almonds and cherries, stir to combine for 1 minute ensuring everything has melted and combined well

4. Dish up with a large dollop of almond butter, compote and flaked almonds around the edge





4. Decorate as beautifully as you can with compote, flaked almonds and cherries
